The present invention relates to a cut-resistant fiber and a preparation method thereof. The preparation method comprises the following steps: surface-treating an inorganic fiber material to improve the affinity of said inorganic fiber material for a polyethylene base material; mixing narrow molecular weight distribution polyethylene polymerized by a single-site catalyst, the treated inorganic fiber material, and processing aids to form a blend; feeding the obtained blend into a twin-screw extruder for melt blending, and obtaining an undrawn fiber melt through a spinneret; drawing the undrawn fiber melt at a high temperature at a high draw ratio of more than 180 times until the inorganic fiber reaches a unidirectional orientation state, then cooling; and drawing the cooled inorganic fiber again at a high temperature at a multiple draw ratio to obtain a cut-resistant polyethylene composite fiber. Compared with the prior art, the present invention solves the problems of environmental pollution, high cost, complicated steps and the like caused by the preparation of traditional ultra-high molecular weight polyethylene fibers and modification based thereon.
